Znamo da se sipe ljube s bobom, ali jeste li znali da su lignje odlične sa slanutkom?

Lignje i slanutak najbolji su u jušnoj kombinaciji koja podsjeća na gulaš, kad su lignje narezane na kolutiće i dodane već napola skuhanom zrnju, no jako lijepo jelo može se pripremiti od istih sastojaka, ali uz malo više truda. Bez brige, svaka sekunda dodatnog posla se isplati.

Donosimo vam recept za punjene lignje sa slanutkom. Možete ih puniti na klasičan način, smjesom od krakova, peršina, češnjaka, mrvica i jaja utvrdo, a možete ih nadjenuti i nečim drugim, primjerice, blitvom, blanširanom pa malo "okrenutom" na lisnato narezanom luku i maslinovom ulju pa zatim pomiješanom s naribanim parmezanom, krušnim mrvicama i začinima. Nećete pogriješiti ni ako dio slanutka iskoristite za nadjev - ovo je jelo vrlo prilagodljivo i dopušta vam da se igrate okusima kako god vam je drago.

Jedino što vam savjetujemo je da iskušate trik za omekšavanje liganja, jednostavan je i zgodan. Bit će vam potrebna mlaćenica, no u nedostatku će vam poslužiti i mlijeko. Mliječna kiselina djelovat će poput enzima i omekšati tkivo lignje pa će biti mekano i podatno.

Punjene lignje sa slanutkom

Sastojci:

400 g slanutka iz konzerve
50-75 g krušnih mrvica
200 ml mlaćenice
75 ml bijelog vina
50 ml mlijeka
50 ml maslinovog ulja
50 g glatkog brašna
​6 manjih liganja
2 režnja češnjaka
1 luk
1 limun
1 žlica nasjeckanog origana
svježi peršin
sol, papar

Priprema:

Pomiješajte mlaćenicu i mlijeko pa u toj smjesi držite lignje nekoliko sati, najbolje bi bilo preko noći. Kad su spremne, posušite ih kuhinjskim ubrusom, skinite im krakove i nasjeckate ih pa ih pomiješajte s usitnjenim jajem utvrdo, krušnim mrvicama, naribanim režnjem češnjaka (ne morate staviti cijeli), sjeckanim peršinom (malo sačuvajte za kasnije), solju i paprom.

Ovom smjesom nadjenite lignje, zakačite im otvor čačkalicom pa ih stavite u širu tavu sa zagrijanim maslinovim uljem i pržite ih sa svih strana da dobiju lijepu boju. Maknite ih s vatre, oprezno zalijte bijelim vinom, poklopite i pustite da se kuhaju na laganoj vatri 7-8 minuta.

Izvadite lignje sa strane i odlijte umak koji se stvorio. U tavu dodajte još malo ulja ako je potrebno pa zatim lisnato narezan luk te ga pirjajte dok ne omekša. Dodajte nasjeckani češnjak i peršin, vratite sok koji su pustile lignje, dodajte ocijeđeni slanutak, sol, papar, koricu i sok limuna. Kuhajte na laganoj vatri par minuta da se poveže.

Kad je slanutak gotov, posložite lignje po vrhu, po želji pospite s još malo peršina i poslužite.

Lignje i slanutak najbolji su u jušnoj kombinaciji koja podsjeća na gulaš, kad su lignje narezane na kolutiće i dodane već napola skuhanom zrnju, no jako lijepo jelo može se pripremiti od istih sastojaka, ali uz malo više truda. Bez brige, svaka sekunda dodatnog posla se isplati.

Donosimo vam recept za punjene lignje sa slanutkom. Možete ih puniti na klasičan način, smjesom od krakova, peršina, češnjaka, mrvica i jaja utvrdo, a možete ih nadjenuti i nečim drugim, primjerice, blitvom, blanširanom pa malo "okrenutom" na lisnato narezanom luku i maslinovom ulju pa zatim pomiješanom s naribanim parmezanom, krušnim mrvicama i začinima. Nećete pogriješiti ni ako dio slanutka iskoristite za nadjev - ovo je jelo vrlo prilagodljivo i dopušta vam da se igrate okusima kako god vam je drago.

Jedino što vam savjetujemo je da iskušate trik za omekšavanje liganja, jednostavan je i zgodan. Bit će vam potrebna mlaćenica, no u nedostatku će vam poslužiti i mlijeko. Mliječna kiselina djelovat će poput enzima i omekšati tkivo lignje pa će biti mekano i podatno.

Punjene lignje sa slanutkom

Sastojci:

400 g slanutka iz konzerve
50-75 g krušnih mrvica
200 ml mlaćenice
75 ml bijelog vina
50 ml mlijeka
50 ml maslinovog ulja
50 g glatkog brašna
​6 manjih liganja
2 režnja češnjaka
1 luk
1 limun
1 žlica nasjeckanog origana
svježi peršin
sol, papar

Priprema:

Pomiješajte mlaćenicu i mlijeko pa u toj smjesi držite lignje nekoliko sati, najbolje bi bilo preko noći. Kad su spremne, posušite ih kuhinjskim ubrusom, skinite im krakove i nasjeckate ih pa ih pomiješajte s usitnjenim jajem utvrdo, krušnim mrvicama, naribanim režnjem češnjaka (ne morate staviti cijeli), sjeckanim peršinom (malo sačuvajte za kasnije), solju i paprom.

Ovom smjesom nadjenite lignje, zakačite im otvor čačkalicom pa ih stavite u širu tavu sa zagrijanim maslinovim uljem i pržite ih sa svih strana da dobiju lijepu boju. Maknite ih s vatre, oprezno zalijte bijelim vinom, poklopite i pustite da se kuhaju na laganoj vatri 7-8 minuta.

Izvadite lignje sa strane i odlijte umak koji se stvorio. U tavu dodajte još malo ulja ako je potrebno pa zatim lisnato narezan luk te ga pirjajte dok ne omekša. Dodajte nasjeckani češnjak i peršin, vratite sok koji su pustile lignje, dodajte ocijeđeni slanutak, sol, papar, koricu i sok limuna. Kuhajte na laganoj vatri par minuta da se poveže.

Kad je slanutak gotov, posložite lignje po vrhu, po želji pospite s još malo peršina i poslužite.
